  • 1 egg, beaten (for egg wash)
  • 2 tablespoons turbinado sugar for sprinkling
  • ¼ teaspoon flaky sea salt

Instructions

  1. Step 1: Prepare the Ingredients Begin by preheating your oven to 400°F (200°C) and lining two baking sheets with parchment paper. Remove the puff pastry from the refrigerator about 10 minutes before using—it should be cold but pliable. In a small bowl, gently crush the blackberries with the back of a fork and mix with 2 tablespoons of honey. Remove the rind from the brie and slice it thinly, keeping it cold until needed.
  2. Step 2: Assemble the Swirls Unfold one sheet of puff pastry onto a lightly floured surface and gently roll it to smooth out the creases. Spread half of the brie slices evenly across the surface, leaving a 1-inch border at the top edge. Drizzle with half of the blackberry-honey mixture and sprinkle with half of the thyme leaves if using. Starting from the bottom, roll the pastry upward tightly, sealing the edge with a little egg wash. Repeat with the second sheet of pastry and remaining ingredients.
  3. Step 3: Slice and Prepare for Baking Place the rolls seam-side down and refrigerate for 10 minutes to firm up. Using a sharp knife, cut each roll into 12 equal slices (about 1-inch thick).
