In a small bowl, gently crush the blackberries with the back of a fork and mix with 2 tablespoons of honey. Remove the rind from the brie and slice it thinly, keeping it cold until needed.
- Step 2: Assemble the Swirls Unfold one sheet of puff pastry onto a lightly floured surface and gently roll it to smooth out the creases. Spread half of the brie slices evenly across the surface, leaving a 1-inch border at the top edge. Drizzle with half of the blackberry-honey mixture and sprinkle with half of the thyme leaves if using. Starting from the bottom, roll the pastry upward tightly, sealing the edge with a little egg wash. Repeat with the second sheet of pastry and remaining ingredients.
