  • Cajun seasoning, divided

  • Chicken broth
  • Fresh lemon juice
  • Fresh parsley, chopped
  • Paprika (preferably smoked)
  • Cayenne pepper (adjust to taste)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Step 1: Prepare the Scallops Remove the small side muscle from each scallop if still attached. Pat the scallops dry with paper towels. Season with 1 tablespoon Cajun seasoning, salt, and pepper. Let sit for 5 minutes.
  2. Step 2: Sear the Scallops Heat a skillet over high heat, add butter and oil. Sear scallops for 1.5-2 minutes per side until browned. Transfer to a plate.
