  • 34 large sweet onions, sliced
  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
  • 1 pound ground beef
  • 1 cup Italian herb bread crumbs
  • 1 cup milk
  • 1 egg
  • 1 oz. package French onion soup mix
  • 1/2 cup cooking sherry
  • 1/2 teaspoon Worcestershire sauce
  • 4 oz. Swiss Gruyère, or provolone cheese
  • Fresh thyme sprigs for garnish

Instructions

  1. Step 1: Prepare the Onions : Place sliced onions at the bottom of a 6 Qt. slow cooker.
  2. Step 2: Sprinkle with salt, pepper, and sugar.
  3. Step 3: Dot with butter and drizzle with the olive oil.
  4. Step 4: Cook on LOW for 9 hours until they are caramelized.
  5. Step 5: Make the Meatloaf : In a bowl, combine ground beef, bread crumbs, milk, egg, and onion soup mix. Mix well and shape into a loaf.
  6. Step 6: Pour cooking sherry and Worcestershire sauce over the caramelized onions in the cooker.
  7. Step 7: Place the meatloaf on top of the onions.
  8. Step 8: Set the slow cooker to HIGH and cook for 3 hours, or until the meatloaf reaches an internal temperature of 160°F.
  9. Step 9: Add the Cheese : Top the meatloaf with slices of cheese.
  10. Step 10: Cook for an additional 20-30 minutes on HIGH, or until the cheese is fully melted and bubbly.
  11. Step 11: Serve : Serve the meatloaf sliced, topped with caramelized onions and juices from the cooker.
  12. Step 12: Garnish with fresh thyme sprigs.
