- 3–4 large sweet onions, sliced
- 4 tablespoons salted butter
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1 teaspoon coarse black pepper
- 1 teaspoon granulated sugar
- 1 pound ground beef
- 1 cup Italian herb bread crumbs
- 1 cup milk
- 1 egg
- 1 oz. package French onion soup mix
- 1/2 cup cooking sherry
- 1/2 teaspoon Worcestershire sauce
- 4 oz. Swiss Gruyère, or provolone cheese
- Fresh thyme sprigs for garnish
Instructions
- Step 1: Prepare the Onions : Place sliced onions at the bottom of a 6 Qt. slow cooker.
- Step 2: Sprinkle with salt, pepper, and sugar.
- Step 3: Dot with butter and drizzle with the olive oil.
- Step 4: Cook on LOW for 9 hours until they are caramelized.
- Step 5: Make the Meatloaf : In a bowl, combine ground beef, bread crumbs, milk, egg, and onion soup mix. Mix well and shape into a loaf.
- Step 6: Pour cooking sherry and Worcestershire sauce over the caramelized onions in the cooker.
- Step 7: Place the meatloaf on top of the onions.
- Step 8: Set the slow cooker to HIGH and cook for 3 hours, or until the meatloaf reaches an internal temperature of 160°F.
- Step 9: Add the Cheese : Top the meatloaf with slices of cheese.
- Step 10: Cook for an additional 20-30 minutes on HIGH, or until the cheese is fully melted and bubbly.
- Step 11: Serve : Serve the meatloaf sliced, topped with caramelized onions and juices from the cooker.
- Step 12: Garnish with fresh thyme sprigs.
