  • 2 tablespoons (30 ml) vegetable oil
  • 3 cloves garlic, minced (about 1 tablespoon)

  • 2 green onions, white and green parts separated and thinly sliced
  • 3 tablespoons (45 ml) soy sauce, low-sodium preferred
  • 1 tablespoon (15 ml) rice vinegar
  • 2 tablespoons (30 ml) brown sugar
  • 1 tablespoon (15 ml) sriracha or chili garlic sauce (adjust to taste)
  • 1 tablespoon (15 ml) sesame oil
  • 1 tablespoon (9 g) sesame seeds, plus more for garnish
  • 1 tablespoon (8 g) cornstarch
  • ¼ cup (60 ml) water

Instructions

  1. Step 1: Prepare the Noodles Bring a medium pot of water to a rolling boil over high heat. Add the ramen noodles and cook for 2 minutes (about 1 minute less than package instructions). You want them slightly undercooked as they’ll finish cooking in the sauce. Drain thoroughly in a colander and rinse briefly with cold water to stop the cooking process and prevent sticking. Set aside while preparing the sauce.
  2. Step 2: Create the Flavor Base Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic, grated ginger, and the white parts of the green onions. Sauté for 30-45 seconds until fragrant but not browned. The aromatics will form the foundation of your flavorful quick saucy ramen.
  3. Step 3: Mix the Sauce In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, sriracha, and sesame oil until well combined. In a separate small bowl, create a cornstarch slurry by mixing cornstarch with water until smooth. This will help thicken your sauce to the perfect consistency that clings to every noodle.
  4. Step 4: Bring It All Together Pour the soy sauce mixture into the skillet with the aromatics and bring to a simmer. Cook for about 1 minute, allowing the flavors to meld. Add the cornstarch slurry and continue simmering, stirring constantly until the sauce begins to thicken, about 1-2 minutes.
