  • 6 cloves garlic, minced
  • 2½ teaspoons Dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1 large bay leaf
  • 2½ cups low-sodium beef stock
  • 1½ cups freshly grated Gruyère cheese
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Step 1: Caramelize the Onions: Heat olive oil and butter in a large skillet over medium heat. Once the butter is melted, add the sliced onions and stir occasionally. Cook for 45-60 minutes, allowing the onions to caramelize slowly. If they begin to dry out, add 1½ teaspoons of water as needed, stirring regularly to avoid browning too quickly.
  2. Step 2: Boil the Gnocchi: While the onions are caramelizing, bring a medium pot of salted water to a boil. Once ready, cook the gnocchi. When they float to the top, they are done. Drain and set aside.
  3. Step 3: Flavor the Onions: When the onions are a deep golden brown, stir in the chopped thyme and garlic. Cook for about 2 minutes until fragrant.
  4. Deglaze: Pour in chicken or vegetable broth, or a mixture of white grape juice and a splash of lemon juice, allowing it to reduce by about half for 3-4 minutes.
  5. Step 5: Thicken the Sauce: Sprinkle the flour into the onion mixture and stir for 1-2 minutes until it thickens slightly. Add the Dijon mustard and Worcestershire sauce, mixing until well combined.
  6. Step 6: Simmer with Stock: Pour in the beef stock and add the bay leaf. Scrape up any brown bits from the bottom of the skillet, then bring the mixture to a boil. Lower the heat and let it simmer for 6-7 minutes until the sauce reduces slightly. Season with salt and pepper to taste.
  7. Step 7: Combine the Gnocchi: Add the cooked gnocchi to the skillet, tossing to combine with the onion sauce.
  8. Step 8: Add Cheese and Broil: Preheat your oven broiler. Sprinkle the Parmesan cheese over the gnocchi, followed by the Gruyère. Place the skillet under the broiler for 3-5 minutes until the cheese is melted and bubbly.
