Indulge in the savory delight of Gourmet Cheesy Mushroom and Garlic Toasts. Discover a delicious recipe perfect for any occasion.

Ingredients

Scale
  • 1 baguette (12 ounces/340g), cut into ½-inch slices
  • 4 tablespoons (56g) unsalted butter, divided
  • 1 pound (450g) mixed mushrooms (cremini, shiitake, oyster), thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons dry white wine (optional)
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1½ cups (170g) shredded Gruyère cheese
  • ½ cup (50g) freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • Extra virgin olive oil for drizzling

Instructions

  1. Step 1: Prepare the bread Preheat your oven to 375°F (190°C). Arrange the baguette slices on a large baking sheet in a single layer. Brush both sides lightly with olive oil and bake for 5-7 minutes until just starting to crisp but not fully browned. The bread should be firm enough to hold toppings but not completely toasted. Remove from the oven and set aside while preparing the mushroom mixture.
  2. Step 2: Sauté the mushrooms In a large skillet, melt 3 tablespoons of butter over medium-high heat. Once it begins to foam, add half the mushrooms and let them cook undisturbed for 2-3 minutes until they begin to brown. Stir and continue cooking for another 2-3 minutes. Transfer to a plate and repeat with the remaining mushrooms. This two-batch method ensures proper browning instead of steaming.
  3. Step 3: Create the mushroom mixture Return all mushrooms to the pan over medium heat. Add the remaining tablespoon of butter along with the minced garlic, cooking for 30 seconds until fragrant. Add thyme leaves, white wine (if using), red pepper flakes, salt, and pepper. Cook for 1-2 minutes until the liquid has mostly evaporated, stirring occasionally. The mixture should be moist but not watery.
  4. Step 4: Assemble and broil Switch your oven to the broil setting. Arrange the pre-toasted baguette slices on a baking sheet. Divide the mushroom mixture evenly among the bread slices, then top with a generous layer of shredded Gruyère followed by a sprinkle of Parmesan. Broil for 2-3 minutes until the cheese is bubbly and begins to develop golden spots. Keep a close eye to prevent burning!
  5. Step 5: Garnish and serve Remove the Gourmet Cheesy Mushroom and Garlic Toasts from the oven and immediately sprinkle with fresh parsley. For an extra touch of luxury, drizzle lightly with high-quality olive oil. Serve immediately while the cheese is still warm and stretchy. These toasts are best enjoyed fresh from the oven when the contrast between crispy bread and creamy topping is at its peak.
