- 1½ lbs (680g) Yukon gold potatoes, diced into ½-inch cubes
- 2 tablespoons (30ml) olive oil, divided
- 1 medium yellow onion (about 1 cup/160g), finely diced
- 3 garlic cloves (about 1 tablespoon/9g), minced
- 1 bell pepper (any color, about ¾ cup/115g), diced
- 2 teaspoons (6g) paprika
- 1 teaspoon (2g) dried oregano
- 1 teaspoon (6g) salt, plus more to taste
- ½ teaspoon (1g) black pepper
- ¾ cup (180ml) chicken broth or stock
- 2 tablespoons (8g) fresh parsley, chopped

- Step 1: Prepare The Potatoes Begin by washing 1½ pounds of Yukon gold potatoes thoroughly under cold water. Pat them dry with paper towels, then dice them into consistent ½-inch cubes. Place the diced potatoes in a microwave-safe bowl with 2 tablespoons of water. Cover with a microwave-safe lid or plate and microwave on high for 4-5 minutes until slightly softened but not fully cooked. Drain any excess water and set aside.
- Step 2: Brown The Turkey Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it into large chunks with a wooden spoon. Let it cook undisturbed for 2-3 minutes until the bottom develops a golden-brown crust. Then break it up into smaller pieces and continue cooking until no pink remains, about 5-6 minutes total. Season with half of the salt, pepper, paprika, and oregano while cooking. Transfer the cooked turkey to a plate and drain any excess liquid from the pan.
- Step 3: Sauté The Aromatics Return the skillet to medium heat and add the remaining tablespoon of olive oil. Add the diced onions and cook for 2-3 minutes until they begin to soften and become translucent. Add the minced garlic and diced bell pepper, cooking for another 1-2 minutes until fragrant. Be careful not to burn the garlic as it can quickly become bitter.
- Step 4: Combine And Simmer Return the browned turkey to the skillet with the sautéed vegetables. Add the par-cooked potatoes and sprinkle with the remaining seasonings. Stir gently to combine all ingredients. Pour in the chicken broth, scraping the bottom of the pan to release any browned bits (these contain amazing flavor!). Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally.
- Step 5: Final Touches Once the potatoes are fork-tender and most of the liquid has been absorbed, taste and adjust seasonings if necessary. Remove from heat and let the ground turkey and tender potatoes rest for 5 minutes, which allows the flavors to meld together. Sprinkle with freshly chopped parsley just before serving for a bright, fresh finish that balances the rich, savory flavors of the dish.
