- 12 mozzarella balls
- 12 cheese tortellini
- 24 cherry tomatoes
- 12 fresh basil leaves
- 12 green olives, pitted
- 12 black olives, pitted
- 12 slices salami
Italian Dressing Marinade: - 1/4 cup extra virgin olive oil
- Juice of 1/2 lemon
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons fresh oregano, chopped
- 2 cloves garlic, grated
- 1 teaspoon dijon mustard
- 1 teaspoon sea salt
- 1/2 teaspoon coarse black pepper
- 1 pinch red pepper flakes
Instructions
- Step 1: Cook the Tortellini:
Follow the package directions to cook the cheese tortellini. Once done, place in a strainer and rinse under cold water until fully cooled. Set aside. - Step 2: Prepare the Italian Dressing Marinade:
In a mason jar, combine the extra virgin olive oil,lemon juice, parsley, oregano, grated garlic, dijon mustard, sea salt, black pepper, and red pepper flakes.
Shake vigorously for 30 seconds until well mixed. - Step 3: Marinate the Ingredients:
Place the mozzarella balls, cooked tortellini, and cherry tomatoes in a bowl with a lid.
Pour the prepared Italian dressing marinade over the ingredients, ensuring they are fully coated. Seal the bowl and let the ingredients marinate in the refrigerator for at least 2 hours, but ideally overnight, for maximum flavor. - Step 4: Assemble the Skewers:
Using wooden or metal skewers, assemble the antipasto skewers by alternating between mozzarella balls, fresh basil leaves, tortellini, green olives, black olives, salami slices, and cherry tomatoes.
Continue until all ingredients are used.
