Description

Maple Sriracha Cauliflower Bliss: Sweet and spicy roasted cauliflower bites drizzled with maple sriracha sauce. Irresistibly delicious!

  • 1 large head cauliflower (about 2 pounds/900g), cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup (60ml) pure maple syrup (not pancake syrup)
  • 23 tablespoons sriracha sauce (adjust to your heat preference)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons sesame seeds
  • 3 green onions, thinly sliced for garnish

Instructions

  1. Step 1: Prep the Cauliflower Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper. Cut your cauliflower head into florets, aiming for pieces about 1½ inches in size – consistency helps them cook evenly. Rinse the florets and dry them thoroughly with a clean kitchen towel. Excess moisture prevents proper crisping, so don’t skip this step!
  2. Step 2: Season and Start Roasting In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper until evenly coated. Spread them in a single layer on the prepared baking sheet, ensuring they’re not touching each other. Roast for 15 minutes until the edges begin to brown but the cauliflower isn’t fully tender yet.
  3. Step 3: Prepare the Maple Sriracha Glaze While the cauliflower roasts, whisk together the maple syrup, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger in a medium bowl until completely combined. This glaze should look smooth and glossy – a sign of good things to come!
  4. Step 4: Glaze and Finish Roasting Remove the partially roasted cauliflower from the oven and reduce temperature to 375°F (190°C). Pour two-thirds of the maple sriracha mixture over the cauliflower and toss gently to coat each piece. Return to the oven and roast for another 10-15 minutes, until the cauliflower is tender and the glaze has begun to caramelize.
  5. Step 5: Final Touches Drizzle the remaining glaze over the hot roasted cauliflower, then sprinkle with sesame seeds. If you’d like an extra crispy finish, place under the broiler for 1-2 minutes – but watch carefully! Remove from the oven, scatter sliced green onions over the top, and serve your Maple Sriracha Cauliflower Bliss immediately while it’s still sizzling hot.
