- ½ tablespoon olive oil
- 2 cups fresh spinach leaves
- Pinch of salt
- 4 slices of bread
- 2 tablespoons softened butter
- 6–8 pieces sun-dried tomatoes, chopped
- ½ cup crumbled feta cheese
- ¼ cup shredded cheddar cheese
- Pinch of oregano
- Pinch of crushed chili flakes
- Honey (optional for serving)
Instructions
- Step 1: Cook the Spinach:.
- Step 2: Heat olive oil in a non-stick pan over medium heat. Add the spinach and sauté for 5-6 minutes until it wilts down. Sprinkle with a pinch of salt, stir, and transfer to a plate. Wipe the pan clean with a paper towel.
- Step 3: Prepare the Bread:.
- Step 4: Spread butter on one side of each slice of bread. Place two slices of bread, buttered side down, in the cleaned pan.
- Step 5: Assemble the Sandwich:.
- Step 6: Spread the chopped sun-dried tomatoes over the unbuttered side of the bread slices in the pan, pressing them gently so they stick.
- Step 7: Add half of the crumbled feta cheese, half of the shredded cheddar cheese, and the cooked spinach on top. Sprinkle the remaining feta and cheddar over the spinach. Finish with a pinch of oregano and crushed chili flakes.

- Step 9: Place the remaining slices of bread on top of the sandwiches, buttered side up.
