  • 2 cups fresh spinach leaves

  • 4 slices of bread

  • 68 pieces sun-dried tomatoes, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup shredded cheddar cheese
  • Pinch of oregano
  • Pinch of crushed chili flakes
  • Honey (optional for serving)

Instructions

  1. Step 1: Cook the Spinach:.
  2. Step 2: Heat olive oil in a non-stick pan over medium heat. Add the spinach and sauté for 5-6 minutes until it wilts down. Sprinkle with a pinch of salt, stir, and transfer to a plate. Wipe the pan clean with a paper towel.
  3. Step 3: Prepare the Bread:.
  4. Step 4: Spread butter on one side of each slice of bread. Place two slices of bread, buttered side down, in the cleaned pan.
  5. Step 5: Assemble the Sandwich:.
