Description

  • 2 tablespoons (30 ml) olive oil, plus extra for drizzling
  • 1 tablespoon (14 g) unsalted butter, softened
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 2 cups (60 g) fresh spinach, roughly chopped
  • ¼ cup (40 g) sun-dried tomatoes, julienned
  • ⅓ cup (80 g) feta cheese, crumbled
  • 1 cup (113 g) mozzarella cheese, shredded
  • 2 tablespoons (30 g) soft goat cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon zest
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Step 1: Prepare the Filling In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant but not browned. Add the chopped spinach and cook for 1-2 minutes until just wilted. Season with a pinch of salt and pepper, then transfer to a plate lined with paper towels to remove excess moisture. Allow to cool slightly while preparing the other ingredients.
  2. Step 2: Create the Cheese Mixture In a small bowl, combine the crumbled feta, shredded mozzarella, dried oregano, lemon zest, and red pepper flakes (if using). Mix gently until well combined.
