Description

Slow Cooker Chicken with Fig Jam and Goat Cheese. Tender chicken cooked with sweet fig jam and creamy goat cheese. Comforting and delicious dish.


Ingredients

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 8 oz (230g) fig jam
  • 4 oz (115g) goat cheese, crumbled
  • 1 large red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • ½ cup (120ml) chicken broth
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Optional: 2 tablespoons honey

Instructions

  1. Step 1: Prepare the Chicken Season chicken thighs generously on both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering. Working in batches to avoid overcrowding, brown the chicken thighs for 2-3 minutes per side until they develop a golden crust. Transfer the browned chicken to a plate and set aside.
  2. Step 2: Prepare the Slow Cooker Base Layer the sliced red onions across the bottom of your slow cooker. This creates a flavorful base and prevents the chicken from sticking to the bottom. Sprinkle the minced garlic, chopped rosemary, and thyme leaves evenly over the onions.
  3. Step 3: Create the Fig Sauce In a medium bowl, whisk together the chicken broth, balsamic vinegar, and fig jam until well combined. The jam might be thick, so keep whisking until you achieve a relatively smooth consistency. If using, add the optional honey for additional sweetness.
  4. Step 4: Assemble in the Slow Cooker Place the browned chicken thighs on top of the onion and herb layer. Pour the fig jam mixture evenly over the chicken. Take half of the goat cheese (about 2 oz/57g) and crumble it in small pieces over the chicken and sauce.
  5. Step 5: Cook to Perfection Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The chicken should be tender enough to easily shred with a fork when done. About 15 minutes before serving, sprinkle the remaining goat cheese over the chicken and replace the lid to allow it to slightly melt.
  6. Step 6: Finish and Serve Before serving, taste the sauce and adjust seasoning if necessary. If you’d like a thicker sauce, transfer 1 cup of the liquid to a small saucepan and simmer over medium heat for 5-10 minutes until reduced. Pour this reduced sauce back over the chicken. Serve your Slow Cooker Chicken with Fig Jam and Goat Cheese garnished with additional fresh herbs if desired.
