Ingredients

  • 2 tsp olive oil
  • 4 scallions, diced
  • 10 oz baby spinach, rough chop
  • 2 tbs dill, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 1/4 cup butter, melted (or substitute with additional olive oil for a healthier option)
  • 4 oz shredded mozzarella
  • 4 oz feta cheese, crumbled
  • 2 tbs grated parmesan cheese

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). Lightly spray a medium-sized baking dish (approximately 10: 5 x 7: 5 inches) with olive oil.
  2. Step 2: In a large, deep pan, heat 1 tsp olive oil over medium heat. Sauté the scallions until softened, about 1-2 minutes. Add half the spinach and cook until wilted, seasoning with salt and pepper to taste. Transfer to a colander to drain and pat dry with paper towels. Repeat with the remaining spinach and olive oil.
  3. Step 3: In a large bowl, whisk together the flour, baking powder, and salt. Stir in the milk, eggs, and melted butter until smooth. Fold in the cooked spinach mixture, dill, mozzarella, and feta cheeses just until combined.
  4. Step 4: Pour the mixture into the prepared baking dish, spreading evenly. Sprinkle with grated parmesan cheese.
  5. Step 5: Bake for 40-45 minutes, or until the top is golden brown. Allow to cool for 15 minutes before slicing.
